College Cuisine Lesson Four: Chocolate Surprise Cupcakes

This dessert will knock the socks off of everyone at your next bake sale.

The words "chocolate" and "cupcake" are two that cannot be confused by anyone with a sweet tooth. They are two of their favorite words to hear. Who doesn't love a little bit of chocolate cake dripping with frosting?

Anyone who rejoices in their sweet tooth will be crying when they try this recipe, for it is one of the most deadly and decadent cupcake recipes available.

These cupcakes are not only stuffed with cheesecake, they are stuffed with an entire OREO cookie. Yes, an entire cookie.

Many who read this might find it to be too rich, in which case, you are free to substitute mini OREOs for the regular-sized sandwich cookies.

These cupcakes are extremely easy to make, and they are certain to bring about gigantic smiles from anyone who has the opportunity to enjoy them.

Chocolate Oreo Surprise Cupcakes:
1 package chocolate cake mix (recommended Swiss Chocolate)
1 (8 ounce) package low-fat Cream Cheese, softened
1 egg
2 tblsp. sugar
1 Bag Mini OREO Bite Size Chocolate Sandwich Cookies
1 can vanilla or cream cheese frosting

Preheat oven to 350 degrees F. Prepare cake batter as directed on package; set aside.
Mix the cream cheese, egg and sugar in a bowl until well blended.

Spoon cake batter into paper-lined, or foil-lined, medium muffin cups. Make sure to fill
each cup about half full.

Top each with a half tablespoon of the cream cheese mixture and one cookie. Cover
evenly with more of the cake batter.

Bake 19 to 22 minutes, or until a toothpick inserted in center comes out clean.
Cool the cupcakes for five minutes and remove them from pans to wire racks. Cool completely.

Top the cupcakes with frosting and another cookie just before you serve them.

Notes:
If you want to be extremely decadent, you can use regular sized OREO cookies, rather than the minis. If you do so, make sure that you add five more minutes of cook-time to the recipe.

Also, make sure that the cream cheese is room temperature; otherwise it will not blend to the right consistency.

Using a hand mixer will help to achieve the proper smoothness.
